Btw, in college I took brewing classes and for one assignment we made a beer modeled after a British ale. During the fermentation process , the fermentation kept stopping, and we had to keep manipulating the process by adding more yeast to get the sugar level down to the target brix. The final product was absolutely amazing, as well as irreproducible. So many complex flavors that we attributed to branch chain alcohols and ketones. The problem was the incredible hangover it produced, which I attributed to the branch chain aldehydes from metabolism.
